Ingredients:
500g large prawns, peeled and deveined (about 16-20 prawns)
1 cup desiccated coconut
½ cup panko breadcrumbs
1 large egg, beaten
2 tablespoons milk (or buttermilk for a local twist)
Salt and pepper to taste
Cooking spray
Optional Dipping Sauce: Sweet chilli sauce (a South African favourite!) or a homemade mango atchar dip.

Instructions:
Preheat: Preheat your air fryer to 200°C (400°F).
Prepare the coating: In a shallow dish, combine desiccated coconut and panko breadcrumbs.
Egg wash: In another shallow dish, whisk together the egg and milk (or buttermilk).
Season the prawns: Season the prawns with salt and pepper.
Coat the prawns: Dip each prawn in the egg mixture, then dredge in the coconut-panko mixture, ensuring they’re well coated.
Air fry: Lightly spray the air fryer basket with cooking spray. Arrange the prawns in a single layer in the air fryer basket, ensuring they aren’t overcrowded. You might need to cook them in batches depending on the size of your air fryer.
Cook: Cook for 5-7 minutes, or until the prawns are golden brown and cooked through. They cook quickly!
Serve: Serve immediately with sweet chilli sauce or your favourite dipping sauce.
