Apple Cinnamon Muffins

Ingredients:

2 cups all-purpose flour
1 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
1 cup milk
2 cups chopped apples

Instructions:

Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or grease with butter.
In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
In a separate bowl, combine melted butter, eggs, vanilla extract, and milk.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Gently fold in the chopped apples.  
Fill muffin cups about 2/3 full.
Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.

These muffins are delicious warm or at room temperature, and they’ll keep for several days in an airtight container. Happy baking!
